VGFacts

I'm trying to change one of my Submissions to a different game, of which currently isn't yet up on VGFacts, but I get a Series and Console Name required in Red. When doing that for New Games, it only shows where to list the game name (the consoles it's for get put in brackets, but there seems to be no place to put in the series name).

You can't edit a pending submission into a new game - you'll need to cancel it and submit it as a new game directly.
