Mine is probably the Bastion soundtrack (on a side note, go play the game now if you haven't already, you won't regret it). It's one of the only soundtracks I can listen to on its own.
The Rayman Origins music is also great and really compliments the game.
So, what game music do you really like?

I really like the Legend of Zelda soundtracks. Also, some songs from a few Mario games.

Bastion is well worthy of mentioning. Lately the Metal Gear Rising Soundtrack is frikkin' awesome. Fits so well with the game and I could easily see it on Kerrang or ...something. I'd also add The Legend of Zelda series, Deadly Premonition, Mirrors Edge(very relaxing), Devil May/may Cry, Final Fantasy(some of the best) there's a lot of great soundtracks from games, it's hard to list 'em all; even from games I haven't played like Halo or Motorstorm.
There's also the obvious entries like Tony Hawks Pro Skater/Guitar Hero/Grid etc which use licensed music.

Gran Turismo 2 introduced me to hard rock, it's soundtrack holds a special place in my heart. The first hard rock song I remember singing the lyrics to was the Sonic Adventure theme, so that's important to me. F-Zero X and Gx had great soundtracks. The first 3 Spyro games had AMAZING soundtracks... Chrono Trigger had great music.

Castlevania: Symphony of the Night and Final Fantasy VI... no question.
Agree with Chrono Trigger.
Klonoa & Skullmonkey's had some great music on PS1 too.
For classic NES stuff, I love Ninja Gaiden 1 & 2 the most.
For newer stuff, I really enjoyed the music in Hell Yeah!, Rocketbirds: Hardboiled Chicken, and the Move Pack DLC on Little Big Planet 2. Sound Shapes and Retro City Rampage too, for sure.

Personally I am torn between two, the first being Jet Set Radio Future, the soundtrack to that game was amazing and I still find myself listening to the songs on my iPod quite a lot of the time.
But at the same time I also loved the Legend of Zelda - Wind Waker soundtrack because of how uplifting it was.
However I love listening to game soundtracks so we could be here all day. :P
