Gonna start my Leafgreen nuzlocke tonight.

Which starter should I start with?

You should do what ProJared did. Roll a die and if it's 1-2 pick Charmander, 3-4 Bulbasaur and 5-6 Squirtle.

I was thinking of doing that but I didn't have a die on me.

You can always flip a coin.
2 Heads = Charmander
1 Head 1 Tail = Bulbasaur
2 Tails = Squirtle

Either that or look up a virtual dice roller.
