Apparently the people who worked on modeling the Pelican Inn Pub had hidden several things in the pub, mostly their names across the area;
The most notable names are Reuban Shah and Brian Beppu. Reuban is an Environment modeler and Brian is a Texture artist.
A larger plaque has more team members on it, including not just Reuban Shah and Brian Beppu, but also Charlotte Francis, Anthony ??VVAH [sic] (Who might actually be Anthony Vaccaro who is also an Environment Modeler), Paul Moya, David Witters and others who at the moment can't be figured out due to the current inability to see it clearly.
The bathroom also has a small name drop, with "Charlie Horsey", which is a bit of a moniker Brian Beppu used.

ND1 DOG, which likely means Naughty Dog, is found as a beer and also a sticker in the pub's restroom.
Also a Naughty Dog logo in the restroom.
Finally, a series of plaques with the Uncharted series titles (Uncharted, Uncharted 2 and Uncharted 3), with the release dates on them (2007, 2009 and 2011.)
