I'd agree but there's a lot to consider when it comes to "ripping-off".
A lot of games get ported, even exclusive handhelds. RE4 was exclusive to Nintendo and look at how many consoles that's been ported to. [insert list of exclusive Wii games ported to Xbox/PS3 too].
I'd also argue that Capcom also supported Nintendo. Sure RE: Rev was ported to HD consoles, but they also ported a HD game to it as a launch title, Super Street Fighter 4.
As for the widescreen problem, the time at which those games where made was during a time when SD was the standard. Getting 4:3 games to fit 16:9 means having to change the resolution, HUD and possibly "crop" it.
Capcom were actually pretty lazy with MvC2 and getting it onto HD screens.

If you are lazy and HD upcale without any consideration for resolution:
(Camera is far too zoomed out, the HUD is small, not to the correct scale and are too far in from the edge of the screen).
RE1 looks just as bad in HD without Widescreen resolution taken into account. Getting around it means having to put the game back into 4:3 mode but move change the settings to 16:3 so that you'll see more on screen but it won't be stretched....or sum ol' shit like that.
They most likely have the original pictures and assets from when they made the remake for the GC, and even if they didn't they could easily get a couple of artists to redo the scenes in 16:9.
If it were impossible then it's understandable but if they have the ability to, it's just being lazy.
