I can't really pick 10 bosses off the top of my head that are my favorite, so I'll go with three.
3. Resident Evil: Code Veronica
[spoiler] Alexis is a very great boss. Problem, she won't stay still and her "leeches" attack you constantly while you're trying to shoot. [/spoiler]
2. Kingdom Hearts 2
[spoiler] Xaldin's fight was great in that game. [/spoiler]
1. Resident Evil 3: Nemesis
[spoiler] The Nemesis is one of my favorite monsters and my favorite boss as well. [/spoiler]
