It would be easy to solve the problems you had yesterday without making an entirely new server but I have no intention to try to stop this from moving forward (nor could I, to be fair).
For the record though, we decided to go with a single server instead of a bunch of smaller ones for a few reasons. First, to signify the fact that this was all one network even if it houses multiple communities. Second, for ease of management. And third, because it was easier to get to a partner status with Discord by combining everything into one. I haven't heard anyone else complain about the mixed groups as they largely tend to keep to themselves anyway but it would not be difficult to set up private channels locked behind roles if there's demand for it.
