You know. It would be a good idea to port the games to the Wii U since you can use that as looking at the cameras in the game. But chances are Nintendo(as well as Scott) doesn't have interest for that.

Scott himself said that Wii U will be obsolete due to NX by the time these console versions would be done. Would've been perfect though, just a year or two too late.

I guess worth mentioning is also that a "year or two too late" means he would've had to make the games on Wii U to begin with, as the series is only 2 years old. So to say, a Wii U version was never a thing that could have happened.
