Aside from the Oogie boogie boss battles from Kingdom Hearts. I'd say both final bosses from the first and second KH games are the ones that take the cake in creativity.
The final boss in the first one, you have to fight your way back to getting Goofy and Donald back from the darkness. The second one takes extremes to a new meaning. Even when your playing the game on expert mode.
