I play normal for my first go, then if I like the game, I can play again with the highest level of difficulty.

I start with easy or very easy just to get a feel for the game, but then later start the game on my second playthrough either on normal or hard depending on how much of a hassle it was on easy because some games had ridiculous curves on difficulties. The difference between one and the other is either very boring to play because you have no challenge or so hard you can't do much because you keep failing.

I always go for the easiest difficulty. One time I played Minecraft on hard.
